Welcome to our Alternate Reality Dark Chocolate, made with upcycled corn cobs instead of cane sugar! The Supplant Company reduces food waste by turning leftover plant fiber into fiber-rich, prebiotic sugar alternatives. With deep, dark cocoa notes and a hint of sweet licorice, this alternative sugar bar is dark chocolate reimagined!
About This Bar
We fully support sustainability through zero waste, so when the Supplant Company told us they upcycle discarded corn cobs into fiber-rich cane sugar alternatives we had to give it a try.
Experimenting with Supplant's different upcycled maize sugar products was fascinating and eye-opening. Their products have their own unique taste, and we also found they're less sweet than cane sugar, so we had to make many adjustments along the way. We made many test batches, with many cacao origins, to find both the right amount of corn cob extract and also the right pairing of cacao flavors.
The winner was our Boyaca beans in a 62% cacao bar. It's dark, delicious... and contains absolutely zero cane sugar! Because the maize cob extract is made from plant fiber it's prebiotic and also has a lower glycemic response compared to glucose.
Don’t be fooled into thinking this 62% dark chocolate tastes super sweet. Our Alternate Reality bar actually tastes more like our 77% cacao bars... and perhaps even a tad darker. Even though the bar has relatively low cacao percentage for dark chocolate there is naturally less sugar present compared to cane sugar. For reference, maize cob extract only has 2g of non-sucrose sugar in every 100g, whereas cane sugar has nearly 100g of sucrose sugar in every 100g!
We love everything about this chocolate bar including that it was inspired by a desire to make food production more sustainable! And it doesn't hurt that it has a wonderfully unique flavor and can be enjoyed by anyone who is looking for cane sugar alternatives.
But, there is some bad news - we'd hoped to make more on a regular basis, but unfortunately this may be the only batch as the company that makes Supplant is having trouble finding funding. We hope more people will realize the value in this product, and that Supplant will be able to resume operations soon. If they do we'll be first in line for their next batch of maize extract.

About our Boyaca Cacao
We are proud to be one of the first chocolate makers to work with Impulsa Bacao and use their Colombian Boyaca beans to make our chocolate. In addition to the beans' comforting and delicious flavor profile, we were truly impressed but the desire and commitment of the community to consistently grow and produce high quality cacao.
Years ago smallholder farmers from San Pablo de Borbur, Colombia were some of the first to voluntarily depart from the divisive and violent coca-production lifestyle. They chose a healthier, safer and more enjoyable path, which includes working together to produce the cacao we rely on to craft this Limited Release bar as well as our award-winning Boyaca 73% dark chocolate.
