A True Single Origin White Chocolate Bar
This is an incredibly special chocolate bar! We make it using our own freshly pressed single origin cocoa butter, which is something almost no one else can do. The beans we use are our directly sourced Almendra Blanca beans from farmer Vicente Caçep, in Tabasco, Mexico. The distinct single origin flavors of these unique, light colored beans shine through in every bite.
Why is this bar so special? Because almost all cocoa butter is made by a handful of large corporations, pressed from beans of unknown origin and quality, then deodorized to remove all flavor. This is what's used in most white chocolate bars, so the flavor of the cacao is completely lost. By using our own beans, and never alkalizing or deodorizing, we're able to retain the unique and special true flavors of the cacao.
We also use the same creamy and flavorful organic whole milk powder which we use in our Classic Milk bar, and which we source directly from Organic West Milk.

About the Almendra Blanca Bean
The Almendra Blanca beans are grown by farmer Vicente Caçep on his farm in Tabasco, Mexico. They have a unique white color and an intense nutty and creamy citrus flavor. He ferments and dries the beans himself, and every year we send a truck to pick them up when they're ready. To the best of our knowledge we're the only chocolate maker in the United States to use Vicente's beans. For more information on this bean please visit our Almendra Blanca page.
About Organic West
Organic West sources from family run dairies on the west coast. All the cows are pasture raised, and their milk is always antibiotic, GMO and rBST free. They buy milk on a regular basis at a stable price, which allows farmers to plan long term. They're able to do this because their facility allows them to turn the milk into many products, including the organic milk powder we use in this bar.
Tasting notes: This bar is very sweet and creamy, with hints of bright fruit and citrus.
