Great taste and one is never enough
Would have rated it higher if I'd eaten it on its own but tried it along side the Colombian boys bar and personally slightly prefer the later.

I go back and forth between this and Guatemala as my favorites, but really all the Goodnow Farms chocolate is fantastic!
It is like no chocolate I have tasted before. If you are a chocolate lover I would really urge you to try any of Goodnow chocolates.
I want to eat this every day - but thoughtfully - in small conscious pieces. It whisks me away to a space where only I and my titivated taste buds exist.
Smooth and full bodied
Nothing fancy, no crazy flavors, just tastes like a chocolate bar, but the best one you've ever tasted.
I like the tones and fairly creamy
The Nicaragua is tied for my favorite no-inclusions chocolate bar. The flavor is amazing even by Goodnow's supremely high bar. I find it changes through a wild variety of delicious flavors.
However, you'll want to eat this one in the first month or two after you get it! After that, some of the flavors will fade, and then it will only be a very good chocolate bar. This is the only Goodnow bar that I'm careful not to wait on too long - the other bars seem to be nearly as delicious on month 6 as day 1.
The Nicaragua 77% is an elegant and composed bar, offering a refined, harmonious experience. It’s perfect for moments when a lighter, more approachable chocolate is desired. The lack of harsh bitterness, combined with its subtle aromatic profile, makes it ideal for fans of milk and dark milk chocolate or milder dark chocolate.

The flavor profile of this bar is the one I prefer, after tasting them all. This is the one that is now my monthly order of sweet decadence. Deep rich and cocoa describes it well, not overly fruity. And of course the characteristic smooth, melt in your mouth like butter, character of all goodnow farms chocolate.
I am a monstrous chocophile and just spent a month sampling gianduiotti from excellent chocolatiers in Torino. I found my favorites and bought an extra suitcase to bring back a stash. :) But, when I returned home to the States, I craved chocolate without anything in it and immediately placed an order for my absolute favorite plain chocolate bar, the El Carmen bar. It is simply amazing. It has the smoothness and flavor of caramel, but none of the cloying sweetness that accompanies a caramel experience. Yet, there is plenty of sweetness, even though it is a 77% bar. When doing tastings with the family and friends, I frequently slip the El Carmen bar in with a set of 70% bars. Noone ever thinks that this is unlike the sweetness of the remainder of the set. And, it always wins as the favorite bar in any set I prepare for a tasting. It really is the perfect bar.
El Carmen is a fresh, delicious dessert, not as heavy as Esmeraldas but very satisfying. The flavor is everything you expect from a high quality single source chocolate without being cloying or overly heavy, a nice reward at the end of a meal.
I keep trying other bars, but I keep coming back to the El Carmen, for its rounded, full flavor and wonderful cocoa butter mouthfeel.
I haven’t eaten my latest El Carmen however I did have some years ago that I had eaten, & I enjoyed it enjoyed it. All of your chocolates are worth their weight in gold, & I will be ordering every chance I get as not only do I eat it I also share it with my friends & relatives!!
This was a gift to someone who is a big dark chocolate fan - they said it had beautiful depth of flavor, and all the bars they received were unique, flavorful, and delicious.
I gifted this to a chocolate queen who is a world authority on cacao. She REALLY knows her stuff and she LOVED it. So thank you! I’m more of a milk and white guy but now I’m curious to try it after everything she said about it.

This chocolate is a real treat. The quality is outstanding. I enjoy the vegan signature line of chocolates. I appreciate the company’s commitment to quality and great tasting healthy dark chocolate.
It was fascinating to truly realize all the subtle flavor notes within all of your differently sourced cocoa in the chocolate bars. Definitely a must for serious chocolate fans! Very enjoyable. It would be great if you could maybe come up with a page by chefs or serious flavor aficionados that would guide people on great wines, after dinner drinks, coffees, teas fruits, or even cigars, etc, that would pair well with certain chocolates. Like designing an itinerary for your tasting trip! Just an idea. Thanks for the amazing chocolate!
