This sweet and savory bar combines our El Carmen chocolate with caramelized onions sourced from single origin spice masters Ethan Frisch and Ori Zohar of Burlap & Barrel. The carefully dried, caramelized onions are refined along with our chocolate in our stone grinders for maximum flavor development. The intense, melt-in-your mouth onion flavor is umami at its best. It's truly a unique and supremely satisfying flavor experience! As with all our bars these are made with cocoa butter we freshly press from the same beans we use to make the bars.
About the Caramelized Onions
Burlap & Barrel sources the dried, caramelized onions used in this bar from Wolfe Farms in the Finger Lake region of New York. This family owned farm was established in 2018, and is committed to growing exceptionally flavorful varietals and also sustainable farming practices. The onions used are Safrane Globe, which is an extremely sweet varietal prized for their firm texture and bronzed skin. The onions are within days of harvesting to concentrate their natural sugar and deepen their flavor. This is the first batch of caramelized onions from Wolfe Farms, and as soon as we tasted them we knew we had to make this bar!
