We crafted this rich, dairy-free delight by combining our jam-forward Esmeraldas cacao beans with JOI's 100% pure coconut milk, organic coconut sugar and juicy strawberries. It's a dream, come true... coconut-creamy, strawberry-licious and velvety smooth!
About This Bar
This lush, rich, chocolate experience has base notes of coconut creaminess and highlights of bright strawberry juiciness. We love making chocolate with flavorful fruits, and by blending organic strawberries with coconut we created a delicious, creamy, rich, uncompromising vegan milk chocolate.
Yes, you can absolutely have a creamy milk chocolate experience with dairy-free milk! As with all foods, flavor relies on the quality and choice of ingredients and how you combine them, and this chocolate is no exception.
After searching for years, we found a coconut milk that tastes great and has no additional drying agent additives- enter JOI's coconut powder that is "Just One Ingredient." Turning coconut milk from liquid to powder is challenging, and an agent is needed to prevent the fatty liquid from clumping together. Typically, companies add maltodextrin or starch during the process to prevent clumping; however, JOI's process uses the coconut meat itself as the carrier so that their coconut milk powder is 100% pure coconut... and oh so tasty!
To deepen the flavor and make this chocolate cane sugar-free we sweetened it with organic coconut sugar and juicy, organic strawberries. Coconut sugar is made from the flower blossom sap of the coconut palm, and it has a deep, browned, butterscotchy taste. For brightness and balance we added scoop after scoop of sweet organic strawberries until we tasted the harmony of berry-bright acidity and jammy notes.
Since our Esmeraldas cacao has jam and dark fruit flavor notes it was the perfect bean to use in crafting this berry delicious (😁) chocolate. Complemented by our freshly-pressed Esmeraldas cocoa butter, this bar is an undeniably delicious and fresh take on vegan milk chocolate.
About our Esmeraldas Cacao
To craft this bar we start with beans we source directly from the Salazar family farm in the Esmeraldas region of Ecuador. The Salazars have over one hundred acres of carefully cultivated, handpicked Nacional hybrid cacao trees. They ferment and dry all of the beans themselves right on their farm, allowing for an exacting level of control over the entire process.
