We source these beans from the Q’eqchi Maya farmers of San Juan Chivite, Guatemala, who harvest the cacao fruit from wild trees surrounding their village. They also ferment and dry their own beans at tow different facilities they built in their village, which allows them to carefully control the fermentation and drying process.
During our first visit to San Juan Chivite the farmers told us their outdated fermentation and drying facility was causing problems with quality control, and was also too small to handle all of the cacao in the area. We helped fund the construction of an updated facility, and now the association has grown from the original ten farmers to more than thirty, and the quality of their beans is exceptional.
Although the association has grown we still receive beans solely from the original ten farmers, who do a custom harvest, fermentation and drying protocol exclusively for us. This allows us to receive beans of consistently high quality which reflect the specific flavors we wish to highlight.
This bar is crafted with freshly pressed Asochivite cocoa butter for intense single origin flavor and exceptional smoothness. We’re one of the only chocolate makers in the country to press our own cocoa butter, and it makes a world of difference in flavor.

Smooth, full of flavor, and very satisfying. This is the best chocolate I've ever tasted. It's hard to describe with words how wonderful this chocolate is, so I will stop now. :)
GoodNow Farms chocolate has always something magical. Something very much related to their freshly pressed cocoa butter that makes a world difference to how the mouthfeel and flavor profile turn out.
Their chocolate bars are always very smooth and creamy with a soft floral edge on the mouth, reliving in the pure essence of that specific origin. Perhaps this ORIGINAL SINGLE ORIGIN CENTRALITY requires a more rigorous and more consistent effort, but this gives more complete as well as permanent results. The flavor profile for a 77% dark chocolate is not bitter at all. I'd add that this is another trademark of this chocolate maker: despite crafting a range of chocolate bars with high cocoa percentage, on the palate, the bitterness is always present in the right balance. My tasting notes are: fruit flavors of green bananas with a fragrant and starchy-tart flavor, and lingering sweet yellow thai mangoes taste. It is softly floral and herbal too, slightly bitter and astringent. The quality of the craftsmanship that came through is quite extraordinary. And it is the only Guatemala #singleorigin that made me smile and I hope it has the same effect on other people like me.
