About Our Fine Flavor, Single Origin Cacao Nibs
Just as we handcraft our award-winning Esmeraldas chocolate, we use the same high-quality, premium flavor approach to make these Cacao Nibs. We source our Esmeraldas cacao beans from the Salazar family in Same, Ecuador. The Salazars’ handpicked three Nacional cacao varietals to plant on their farm and also built their own fermentation and drying facility. This exceptional level of control of the entire harvest and post-harvest process results in exceptionally flavorful beans. At our Massachusetts farm we carefully sort, roast with a custom profile, crack and winnow our Esmeraldas cacao, yielding flavorful, nutrient-rich cacao nibs. There are no additives or preservatives whatsoever.
Nibs are the crushed seeds of the cacao fruit.
Instead of turning these nibs into chocolate, we’ve carefully packaged them for a different, delicious treat. When you bite and crunch into these nibs, cocoa, fruity, nutty and earthy flavors excite your senses. Add Cacao Nibs to smoothies, oatmeal, salads, granola, yogurt, ice cream or baked goods for a less-sweet chocolate alternative. Or, steep them in an open tea basket and hot water for an intense tea experience.
What’s in a nib?
Naturally, cacao beans contain around 50% fat (cocoa butter) and 50% cacao solids including fiber, minerals and other compounds like polyphenols. Polyphenols occur naturally in plants and have high nutritional value. To date, over 8,000 different compounds have been identified. Cacao is recognized as a rich source of these polyphenols. Why are these micronutrients important? Because when eaten, polyphenols can have health benefits including acting as antioxidants and reducing inflammation.

Everything in this Cacao Nibs jar is fully biodegradable, compostable or reusable. After enjoying your nibs, place the jar label into your compost bin or garden. Then reuse the jar- it’s a great size for anything, and the lid makes it easy to shake and store. Here are a few ideas to get you started:
