Limited Release, Kerala
Limited Release bars are our way of sharing the incredible fine flavor cacao we receive from farmers all over the world. Although we aren’t able to visit these farms personally we’re so impressed with the quality and incredible flavors we just had to turn the beans into chocolate. As with all our bars these are made with cocoa butter we freshly press from the same beans we use to make the bars. We make only one batch of each of origin, so they’re only available for a limited time.
About the Kerala beans
We source these beans from Dan O’Doherty at Cacao Services, which is the importer of record for GoGround Beans and Spices, based in Kerala, India. Go Ground is a social enterprise founded by Luca Beltrame and Ellen Taerwe, and their central post-harvest center is located in Undumbannoor Village, in the Idukki District of India.
Go Ground sources their beans from 150 local farmers, paying prices around 25% higher than the local market price. Their staff consists primarily of nine women employed in bean receipt, quality check, fermentation, drying, storage and packaging operations, while two men purchase and pick up fresh beans a farm gate to ensure ripeness and quality.
Dan is a geneticist who has spent time working with cacao farmers and producers all over the world to help them maximize the flavor and quality of their cacao beans. We’ve been lucky enough to spend time with him in both Ecuador and Costa Rica, and have seen firsthand the unique expertise he brings to each origin with which he works. As soon we tried samples of the GoGround Kerala beans we knew we had to create this Limited Release bar.
Tasting notes: This bright, acidic bar contains flavor notes of dried fruits (apple, cherry, apricot).
