Limited Release, Black Lime
Available exclusively on our website! Limited Release bars are our way of sharing the incredible fine flavor cacao we receive from farmers all over the world and showcasing unique flavor combinations. Although we aren’t able to visit the cacao farms personally we’re so impressed with the quality and incredible flavors we just had to turn the beans into chocolate. And every once in awhile we come across a flavor so incredible (like the black lime) we just have to pair it with our single origin chocolate.
As with all our bars these are made with cocoa butter we freshly press from the same beans we use to make the bars. We make only one batch so they’re available for a limited time.
What is black lime?
The ground black lime we used for this bar was grown on a family farm in the Alta Verapaz region of Guatemala (which is the same region of Guatemala from which we source the Ademayach cacao beans we used to make this chocolate!) Limes are picked when they’re ripe and dried in the sun until they turn a reddish brown. They’re then wrapped in bags so they can be further “steamed” in the sun and are then dried again. We source the ground black lime used in this bar from the single origin spice masters at Burlap & Barrel.

About our Ademayach Cacao
Ademayach is a close cousin of one of our Signature Line cacao beans, Asochivite. Shortly after we first visited the village of San Juan Chivite in Alta Verapaz, Guatemala, we funded the construction of a new fermentation and drying facility for their cacao. Once the new facility was complete the farmers were able to increase production, adding cacao from other farmers in the village and also nearby towns. Our Asochivite is made with cacao grown on the original 12 farms, and is fermented and dried to our custom specifications. The Ademayach cacao includes not only beans from the original farms but from other local farmers who have since joined the association, and it uses a very different fermentation and drying protocol. I wanted to try this new bar since I haven't had anything from Goodnow that I don't love. This one was no exception. Wonderful balance and not at all bitter.
Nuanced & complex. Very fine. I’m happy. Further to happiness, Goodnow customer service is really excellent.
This is superb chocolate! It has a fruity flavor that's part of the chocolate, not added. I've never tasted anything quite like it.
