Limited Release, Bejofo Estate
Available exclusively on our website! These Limited Release bars are our way of sharing the incredible fine flavor cacao we receive from farmers all over the world. Although we aren’t able to visit these farms personally we’re so impressed with the quality and incredible flavors we just had to turn the beans into chocolate. As with all our bars these are made with cocoa butter we freshly press from the same beans we use to make the bars. We make only one batch of each of origin, so they’re only available for a limited time.
About Bejofo Estate
Madagascar is considered to be one of the best places in the world to find fine flavor cacao with unique and interesting flavor characteristics. We’ve wanted to make a bar with Madagascar cacao for a very long time, and are proud to present this Limited Edition bar made with cacao from the 100-year-old Bejofo Estate.
The Bejofo Estate is owned by Bertil Akesson, one of the best known and most experienced cacao producers in the world. The estate is located in the Sambirano Valley, in the northwest of Madagascar. The genetic profile is predominantly Criollo with a mix of other genetics, primarily Amelonando. In 2018 Akesson’s Bejofo Estate cacao was awarded an Heirloom Designation by the Heirloom Cacao Preservation Fund.
Tasting notes: Caramel, citrus, cherry. Smooth, balanced and mellow. Long, slightly nutty finish.
