the main crops in the region, but the local farmers abandoned it in favor of other crops, such as cacao, which bring more safety and security to the area.\u003c\/p\u003e\n\u003cp\u003eImpulsa Bacao made a significant investment in the area when they built a new fermentation and drying facility in the town several years ago.  They work with the farmers to identify fine flavor cacao and ensure their harvest practices meet the high standards necessary for consistency and quality.  They purchase the cacao at prices higher than what the farmers would receive selling it on the local market, and manage all of the fermentation and drying in their facility, following strict, carefully monitored protocols.\u003c\/p\u003e\n\u003cp\u003eWe were actually the first chocolate maker to make chocolate using their beans.  On our trip we met many of the farmers who supply cacao to Impulsa, as well as the staff who manage operations, Anyi Torres and William Bonilla.  We worked with them to finalize their protocols by giving our feedback on the various fermentation lots they sent us to test.  We're thrilled with the final flavors, which is a testament to their hard work and Hacienda Jesus Maria farm in Tabasco, Mexico for over 80 years.\u003c\/p\u003e\n\u003cp\u003eDespite having a 77% cacao content this bar is very light in color, which is due to the fact that the beans are white as opposed to the standard purple.  This is how the bean gets its name - Almendra Blanca literally means \"white almond.\"   People often assume white beans are Criollo beans, but that's not usually the case.  The white color is simple one of the many genetic variations which occur in all beans.\u003c\/p\u003e\n\u003cp\u003eMonica first discovered Vicente's farm on one of her sourcing trips to Mexico, and was impressed by the quality of his beans and his entire operation.  He runs his own nursery to cultivate cacao trees which produce these unique white beans, and also does all of his own fermentation and drying.  He wasn't exporting beans to the United States so we worked with him to arrange transportation to our farm.  Each year we send a truck to his farm to pick up the
