 \u003c\/strong\u003e\u003c\/h3\u003e\n\u003cdiv class=\"gnf-featured-product-toggle\"\u003e\n\u003cp\u003e\u003cstrong\u003eAbout the Herbaceous Green Sichuan Pepper\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eWhen Yao Zhao returned home to visit his family for Chinese New Year, his mom made a salad with local Green Sichuan Pepper oil, and lightning struck! the wild trees surrounding their village, and handle all of the fermentation and drying themselves.  They harvest our beans from ten specific farms, and ferment and dry them using our custom fermentation and drying protocols.  The result is extremely bright and fruity beans, and we preserve those qualities through our careful roasting and conching  However, as with all our bars, we freshly press our cocoa butter from the same beans we use to make our chocolate.  This ensures the cocoa butter retains the single origin flavors of the beans, which Chili\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eThe Black Urfa Chili used in this bar is sourced by Burlap \u0026amp; Barrel from Southeastern Turkey, just outside the city of Şanlıurfa.  It starts as a red, sweet, spicy pepper.  After harvesting it's fermented in the sun where it changes color from red to black and develops its characteristic flavor profile.  Much like our chocolate it's ground between massive granite wheels.  Sunflower oil and salt are added during the grinding process.  The chilis are grown by farmer Bekir Bey.  He and his family spend about ten months a year envisioned as a pure conservation land trust approach to preserve biodiversity using the Bicknell’s thrush as a landmark species.  However, shortly after the reserve was designated in 2012 founder Charles Kerchner saw an opportunity to not only help local farmers receive higher prices for their cacao but also raise funds to help with management of the reserve.  This was the inspiration for cacao beans, and add directly sourced coffee from El Recreo Roasterie in West Roxbury.  The owners of El Recreo, husband and wife team Hector and Miriam Morales, import all their Arabica coffee beans directly from their family farm in Jinotega, Nicaragua and roast the beans themselves.\u003c\/p\u003e\n\u003cp\u003eWe use their Light Roast Estate Premium coffee for this bar.  We coarsely grind the beans and then add them directly to our tempering machine, which allows the small pieces of the coffee beans to mix evenly with the chocolate, ensuring consistent flavor with each bite.  Although the chocolate is smooth the bits of coffee bean give a satisfying coffee crunch.\u003c\/p\u003e\n\u003cp\u003eWe source the cacao beans for this bar from Cacao Bisiesto, which has a fermentation facility just outside of Matagalpa, Nicaragua.  The owner, Giff Laube, has his own cacao farm but also sources from dozens of farmers in the surrounding area, paying prices higher than what the farmers would receive if they sold the beans locally.  The beans for our bars are sourced from a handful of small family farms located in El Carmen, just down the road from the fermentary.\u003c\/p\u003e\n\u003cp\u003eOn our numerous visits to Matagalpa we've visited not only the fermentary but also the farms from which our specific beans are sourced.  We also worked with Giff to develop a custom fermentation profile, which highlights our favorite flavors in the beans.\u003c\/p\u003e\n\u003cp\u003eWe've also visited the El Recreo farm in Jinotega, where the Morales family provides education, housing and health care for their workers.\u003c\/p\u003e\n\u003cp\u003eWe freshly press the cocoa butter for this bar from the same El Carmen beans we use to make the
