We love making chocolate with flavorful fruits, and by blending organic strawberries with coconut we created a delicious, creamy, rich, uncompromising vegan milk chocolate.\u003cbr\u003e\u003cbr\u003eYes, you can absolutely have a creamy milk chocolate experience with dairy-free milk!   As with all foods, flavor relies on the quality and choice of ingredients and how you combine them, and this chocolate is no exception.\u003cbr\u003e\u003cbr\u003eAfter searching for years, we found a coconut milk that tastes great and has no additional drying agent additives- enter \u003ca href=\"https:\/\/addjoi.com\/products\/coconut-powder\"\u003eJOI's coconut powder\u003c\/a\u003e that is \"\u003cstrong\u003eJ\u003c\/strong\u003eust \u003cstrong\u003eO\u003c\/strong\u003ene \u003cstrong\u003eI\u003c\/strong\u003engredient.\"  Turning coconut milk from liquid to powder is challenging, and an agent is needed to prevent the fatty liquid from clumping together.  Typically, companies add maltodextrin or starch during the process to prevent clumping; however, JOI's process uses the coconut meat itself as the carrier so that their coconut milk powder is 100% pure coconut... and oh so tasty!\u003cbr\u003e\u003cbr\u003eTo deepen the flavor and make this chocolate cane sugar-free we sweetened it with organic coconut sugar and juicy, organic strawberries. Coconut sugar is made from the flower blossom sap of the coconut palm, and it has a deep, browned, butterscotchy taste. Bar\u003c\/strong\u003e\u003cbr\u003e\u003cbr\u003eWe fully support sustainability through zero waste, so when the Supplant Company from the UK told us they upcycle discarded corn cobs into fiber-rich cane sugar alternatives we had to give it a try.\u003cbr\u003e\u003cbr\u003eExperimenting with Supplant's different upcycled maize sugar products was fascinating and eye-opening.  Their products have their own unique taste, and we also found they're less sweet than cane sugar, so we had to make many adjustments along the way.   We made many test batches, with different cacao origins, to find both the right amount of corn cob extract and also the right pairing of cacao flavors.\u003cbr\u003e\u003c\/p\u003e\n\u003cdiv class=\"gnf-featured-product-toggle\"\u003e\n\u003cbr\u003e\u003cbr\u003eThe winner was our Boyaca beans in a 62% cacao bar.  It's dark, delicious...  and contains absolutely zero cane sugar!   Because the maize cob extract is made from plant fiber it's prebiotic and also has a lower glycemic response compared to glucose.\u003cbr\u003e\u003cbr\u003eAnd don’t assume this 62% dark chocolate tastes super sweet.  Our Alternate Reality bar actually tastes more like our 77% cacao bars... and perhaps even a tad darker.   Even though the bar has relatively low cacao percentage for dark chocolate there is naturally less sugar present compared to cane sugar.  For reference, maize cob extract only has 2g of non-sucrose sugar in every 100g, whereas cane sugar has nearly 100g of sucrose sugar in every 100g!\u003cbr\u003e\u003cbr\u003eWe love everything about this chocolate bar including that it was inspired by a desire to make food production more sustainable!  And it doesn't hurt that it has a wonderfully unique flavor and can be enjoyed by anyone who is looking for cane sugar alternatives.\u003cbr\u003e\u003cbr\u003eBut, there is some bad news - we'd hoped to make more on a regular basis, but unfortunately this may be the only batch as the company that makes Supplant \u003ca href=\"https:\/\/thefinancialanalyst.net\/2025\/08\/05\/supplants-collapse-a-cautionary-tale-for-agritech-investors\/\"\u003eis having trouble finding funding\u003c\/a\u003e.  We hope more people will realize the value in this product, and that Supplant will be able to resume operations soon.  If they do we'll be first in line for their next batch of maize cob Bar\u003c\/strong\u003e\u003cbr\u003e\u003cbr\u003eOver a decade ago Giff discovered what he thought may be ancient Criollo trees in a remote area of the jungle in Nicaragua.  He had the leaves from several trees \u003ca href=\"https:\/\/cdn.shopify.com\/s\/files\/1\/0759\/5602\/7563\/files\/Yasica-Genetic-Testing-Graph.pdf?v=1781714660\"\u003etested by the USDA\u003c\/a\u003e (test results below), and one tree (identified as \"Laube 1\" on the test results) turned out to actually be ancient Nicaragua Criollo.  Giff cleared a section of his farm away from his other trees and began to propagate this ancient Criollo along the Yasica river through \u003ca href=\"https:\/\/www.ctahr.hawaii.edu\/oc\/freepubs\/pdf\/FN55.pdf\"\u003egrafting\u003c\/a\u003e.\u003cbr\u003e\u003cbr\u003eAlmost ten years after first beginning this labor of love, Giff's painstakingly grafted and nurtured trees finally produced enough beans for a single sack of dried cacao.  He sent us that sack, and we created this incredibly special bar, which won Best in Competition when it debuted at the Northwest Chocolate Festival.  This year Giff sent the beans via air freight as soon as they were ready, and we began crafting this bar right away.  We only have a very small number of bars.\u003cbr\u003e\u003cbr\u003eThe beans themselves are white, which result in a light brown color once dried (see cut test picture in the gallery).  They're extremely small, and with only one sack we had to get everything right the first time.  After deciding on the best roasting temperature we carefully monitored the entire roast, tasting beans at one-minute intervals and stopping the roast as soon as we felt the flavors were fully developed.  We took a similar approach with the conch, tasting hourly throughout the process and stopping the grinders once we felt the chocolate had reached peak flavor.\u003cbr\u003e\u003cbr\u003eThe flavors in this bar are intense and exquisite, with notes of sweet Concord grapes (grape jelly), juicy strawberries, honey and cashews (among others).  It's fascinating to think that these may be some of the same flavors that indigenous Latin American peoples tasted in their cacao hundreds of years Genetics\u003c\/strong\u003e\u003cbr\u003e\u003cbr\u003eThere's often confusion surrounding the term \"Criollo.\"  A common misconception is that there are three genetic types of cacao:  Criollo, Forestero and Trinitario, with Criollo being considered the best.  This is absolutely not true.\u003cbr\u003e\u003cbr\u003eFor one thing, Forestero and Trinitario aren't even genetic types - they're cultivars.  In addition, there are over a dozen \u003ca href=\"https:\/\/cdn.shopify.com\/s\/files\/1\/0759\/5602\/7563\/files\/Examples-of-cacao-genetic-varieties.pdf?v=1781714660\"\u003edifferent genetic types of cacao\u003c\/a\u003e that have been catalogued, and more that haven't been.  Plus, unless specific genetic varieties are planted in areas separate from other genetic varieties, the genetics get mixed together not only between trees in the same area but even within pods on the same tree.\u003cbr\u003e\u003cbr\u003eMost importantly, growing Criollo is NOT particularly good for cacao farmers.  The trees are very susceptible to disease, and aren't good producers.  This is one of the reasons Giff was only able to produce one sack despite having many trees.\u003cbr\u003e\u003cbr\u003eThis project is truly a labor of love on Giff's part.  He has a large cacao farm which is productive and sustainable, and was able to undertake this years-long project because the other operations on his farm made it financially possible.  In addition, he was lucky enough able to get the cacao leaves tested by the USDA - something that's very difficult to do.\u003cbr\u003e\u003cbr\u003eIn the end, great flavor comes down to many factors other than simply genetics - the expertise of the farmers, how the cacao is cultivated and harvested, the skill and techniques of the post-harvest facility, and of course the approach an individual chocolate maker takes to roasting and conching (among other things).\u003cbr\u003e\u003cbr\u003eWe're very lucky that Giff put so much time and effort into making these beans, and that he chose to share them with us.  As a cacao farmer, Giff understands and appreciates the value of such a special project, and as chocolate makers we're fascinated and intrigued by the unique flavors in this bean, and what it represents.  But, this bar needs to be viewed as a flavorful exception to the standard practices of consumed as a root tea  for medicinal benefits.  The ingredients evolved in the late 1800s when it became commercialized for the public as a sweet extract, and also a drink touted for its for health benefits.\u003cbr\u003e\u003cbr\u003eRoot beer is one of our family's favorites.  We especially enjoy drinking a cold, frothy root beer after a yummy meal.  But “root beer” tastes very different depending on the brand you drink and the ingredients used.  Sometimes it's hard to find a good \"root beer\" flavor.\u003cbr\u003e\u003cbr\u003eSo, we decided to taste-test ten different root beers to figure out which ones we liked best, and why.  We tasted every type of root beer from grocery store brands to specialty \"gourmet\" root beers.  We found drastic flavor differences - some we enjoyed (marshmallowy, licorice, vanilla and wintergreen), and some we didn’t (cola, cherry cough syrup, intensely sweet).  And looking at the ingredients listed on the labels didn't help with figuring out what it was we liked - the labels often only listed a few things:  corn syrup, cane sugar, water, some preservatives, natural and artificial flavors, and spices.\u003cbr\u003e\u003cbr\u003eSo, when it came time to make our first test batches of chocolate we were on our own.  We researched the ingredients that have historically been used in root beer (some of which are now illegal!) and had fun trying new and different flavors, too.  We created many different combinations, and after LOTS of test batches we came up with a robust and delicious (and legal) recipe for what we believe is the
